Hotteok
Serves 4 · 120 min · Korean
Ingredients
- 240 ml lukewarm water
- 1 tbsp white sugar
- 2 tsp instant dry yeast
- ½ tsp salt
- 1 tbsp neutral vegetable oil
- 220 g all-purpose flour
- 60 g glutinous rice flour (chapssal-garu)
- 100 g dark brown sugar
- 1 tsp ground cinnamon
- 30 g walnuts
- 4 tbsp neutral vegetable oil
Method
- 01Wake the yeast Pour the lukewarm water into a large bowl, stir in the white sugar and the yeast, and leave it for about five minutes until it looks a little foamy.
- 02Mix the dough Add the salt, one tablespoon of oil, the all-purpose flour and the glutinous rice flour, and stir with a wooden spoon for about two minutes until you have a smooth, very sticky dough.
- 03Let it rise Cover the bowl with a damp cloth or plastic wrap and leave it in a warm spot for about one hour, until the dough has doubled in size.
- 04Make the filling While the dough rises, mix the brown sugar, cinnamon and chopped walnuts together in a small bowl.
- 05Knock back and rest Punch the dough down with your fist to release the air, cover it again, and let it rest for fifteen minutes.
- 06Fill the pancakes Oil your hands, take an eighth of the dough, flatten it in your palm, put about one and a half tablespoons of filling in the middle, and pinch the edges together to seal it into a ball. Repeat to make eight.
- 07Heat the pan Heat a large frying pan over medium heat with about one tablespoon of oil for one minute.
- 08Fry the seam side Place two or three dough balls in the pan seam side down and fry for about one minute until the bottom is golden.
- 09Flip and press Turn each ball over and press it flat with an oiled spatula or a hotteok press until it is about ten centimetres wide, then fry for one more minute.
- 10Finish covered Flip the pancakes again, turn the heat to low, cover the pan, and cook for two minutes so the sugar inside melts into syrup.
- 11Repeat and serve Move the cooked hotteok to a plate, add a little more oil to the pan, and fry the rest the same way. Serve them warm.
